Protein-Packed Scrambled Egg & Avocado Bowl

This is one of those simple breakfasts that will keep you on track with your fitness goals all day.   • Chile lime seasoning (optional)
  • Everything bagel seasoning (optional)

Instructions:

  1. Make the Scrambled Eggs: Begin by preparing your scrambled eggs. Whisk together however many eggs you’d like to use. Add them to a cold pan along with 1 tablespoon of butter or oil. Place the pan over low-medium heat, and gently move the eggs back and forth with a spatula. Be patient—this slow cooking method will yield the creamiest, most delicious scrambled eggs.
  2. Finish the Eggs: Once the eggs are almost fully cooked, turn off the heat. The residual heat will continue to cook the eggs to perfection. Season with a pinch of salt and fresh cracked pepper to taste.
  3. Assemble the Bowl: Grab a bowl and spread a serving of cottage cheese at the bottom. Place the scrambled eggs on top of the cottage cheese.
  4. Add the Avocado: Slice half an avocado (approximately 65g) and add it to the bowl alongside the eggs.
  5. Add Flavorful Toppings: Enhance the flavor with some lower-calorie, flavorful additions. I like to add finely diced red onions and jalapeños for a bit of spice. You can also sprinkle on fresh herbs like cilantro or basil, and finish with a drizzle of hot sauce or sriracha if you like some heat.
  6. Season to Perfection: Top everything off with some chile lime seasoning and everything bagel seasoning for an extra burst of flavor.
